I ran a home-made 7 sp cassette on a 8/9/10 sp Ultegra hub by intalling
spacers at each end (near spokes and near lockring). I think I just used
spare spacers from my cog box, 7 or 8 speed ones. It worked fine.

Note: sometimes if your spacers (or cassette as a whole) are a wee bit too
thick, you can get by if you choose a lockring with deeper threads. Torque
IME gets everything back to normal width specs. That's what I do with my
current home-made 9 sp, where many of the cogs are thicker 7 or 8 sp types.
