We've done that, with our own goat's milk (when we had a goat). The farmers 
cheese was excellent and fast to produce. The parmesan that turned out was 
wonderful. Two of the three became experiments in mould and that takes some 
doing in Colorado in winter. Sardonic grin. I greatly admire the skill it 
takes to make cheese.
