Years ago, used to ride (and even occasionally race) off-road on a
bike with fenders.  They were plastic, though.  So were able to be re-
formed if things broke.

The only advice I can give is to make sure the fenders are well
attached at the seatstay bridge.  Otherwise they may flex more in off-
road situations.

Other than that, go for it.
