I wanted to thank everyone for their thoughts and ideas about this. Reporting in: the Shimano 105 logos on the crank arms came right off using a razor blade. I just scraped the paint off, with a light touch on the blade. As usual, less is more.
There was also a 105 logo on the rear derailleur. This one was a bit more problematic - I took the same approach, but it turns out that there was a plastic-like coating under the logo paint, which I also ended up scraping off. We'll see if this bit tarnishes over time. To my eye, which doesn't like logos on either small bike parts or clothes, the bike looks much better.
