You can also run this command to check if SA is working correctly.
spamassassin -x --lint
I ran the above command but there wasn't any output. I'm hoping that no output is the correct output.

Yes, this is correct and your installation output looks ok. Spamassassin is detected.
Have you looked at the logs? /var/spool/qmailscan/qmail-queue.log and /var/spool/qmailscan/mailstats.csv
As I have not played with Gentoo I can't figure why it doesn't work, but it seems a serious work and it (almost) works for Arnvid.
