I need to remove-erase-delete all the pixels inside a Shp file within a DEM, leaving the region, lakes in this case, with zero pixels.
While I'm not sure I understand what the problem is, I guess you just need to use the "Rasterize (overwrite with fixed value)" https://docs.qgis.org/3.34/en/docs/user_manual/processing_algs/gdal/vectorconversion.html#rasterize-overwrite-with-fixed-value
