You don't necessarily need to learn Objective C, or Java for the
Android-based tabs and phones. You can use toolkits like Appcelerator,
PhoneGap, RhoMobile and so on. I use the former, which lets you target
the Apple devices and also Android from one Javascript codebase. 

To talk to VFP data you will need to go through some sort of web service
which gives you data in JSON format, and to which you send data back in
JSON format.

It might be easier to invest in an RDP client (or even LogMein at a
pinch) and give them the illusion that they're running it on iPad.
