To ensure the maximum compatibility, I'd recommend the multi-part,
assuming you need to send HTML at all. A number of business clients
who are sending out routine business correspondence find text to be
sufficient, but if you're selling things, HTML mails supposedly have a
better conversion rate.

I would expect blind or readers of limited visual acuity to appreciate
text-only (or available) versions, too.
