As to popularity, I use "mutt", which already supports setting the envelope sender based on the "From:" header, passing the desired envelope sender to sendmail(1).
Huh, I didn't know it does that. I've only tried sending with sendmail(1) via the command line before incorporating it into my setup, to make sure everything works beforehand. That'll help!
I do think this feature rather belongs in the MUA.
