No it doesn't.

http://www.postfix.org/postconf.5.html#local_header_rewrite_clients says:

    Rewrite message header addresses in mail from these clients and
    update incomplete addresses with the domain name in $myorigin
    or $mydomain.

"Rewrite message header addresses" includes canonical mappings and
address masqueading. The complete list for headers and envelopes
while receiving mail is at

Postfix also rewrites headers and envelopes while delivering mail,
but that is not controlled with local_header_rewrite_clients.
