I didn't say that 127.0.0.1 is Amazon SES. That is my server. As soon as I change "smtp_tls_security_level = encrypt" with "smtp_tls_security_level = may", it works.

My question is that why "encrypt" option is not working with my postfix setup.

There is no error message other than "TLS is required, but was not offered by host 127.0.0.1"

into the wrong direction.  Please follow the instructions laid down in

If I comment "smtp_tls_security_level = encrypt" and add
"smtp_tls_security_level = may" in main.cf, postfix successfully delivers
emails.
Maybe because "may" does exactly what it say?

- I have LE certs already installed on the server
Amazon SES is for outgoing mail, so no cert required.
