Because you can't make money with NXDOMAIN. If a domain expired it's technically not your domain anymore. A page with adverts can generate revenue while you have the chance to get your domain reactivated. Some registrars chose to do it that way. I don't like it but without that redemption period your domain would be gone and most likely registered by a company that buys and sells domain names. Getting it back would be much more expensive.
