So, I have tried to set the relayhost to a specific mailhub address but have
not been able to make this work. I get a message then which reads like:

delivery temporarily suspended: lost connection with the mailhub server while
receiving the initial server greeting

The advice from my IT is to move to a web-based mail service that I detest. So,
I was trying to get around it on my own. And I appear to have gotten around it
(to a reasonable extent) but for the VPN up/down issue.

I am happy to look into other solutions that may work or work better.
