Postfix (as it should) uses DNS in the SMTP client when sending mail. On the receiving SMTP server, Postfix uses the platform's getnameinfo(3) and getaddrinfo(3) interfaces to resolve IP -> name -> IP. So if /etc/hosts does not do the trick, it must not be the preferred source in /etc/nsswitch.conf or similar OS configuration.
