That logging is irrelevant.  Don't needlessly enable verbose logging.

When postfix tries to send the email to the upstream smarthost, it's rejected 
as it has a null sender (I've confirmed this with a network trace). I am 
wondering what I should check next to nail the problem.
You're probably observing the transmission of a bounce, not the original
message.

Your upstream gateway should not reject relaying of bounces.  If that
can't be fixed, find a better gateway.
