I am closing this now. The problem is not with Postfix IMAP or anything with the installation apparently. I *am* sorry for wasting peoples time, including my own.
The installation actually recieves mail - despite firm statements to the contrary. I have tested the installation from Kmail and Thunderbird on my laptop sending from my private email address (not this one). Now, just for the heck of it - I tried mailing from gmail to and acount on skjoldebrand.eu (which is hosted on the "problem server"). It was recieved.
