who makes the DNS records for that infinite and undefined subdomains and
how should somebody send mail without a DNS record?

You've never heard of wildcard dns? He could do what he wants by just
adding this to his "foo.org" zone:

surely - i am responsible for some hundret of sites from EPP over NDS to services and that's why i know aynthing for sure than that the most stupid thing somebody can do in context of mail are wildcards

I don't know how he'd do the Postfix side though...
