As documented, you can't. The body/header_checks features are not meant to be a content manipulation system. Their primary purpose is to block mail that no-one should receive. If you need to have user-dependent content checks, then you will need to use an external content filter. See: http://www.postfix.org/CONTENT_INSPECTION_README.html and documents referenced by it.
