The relayhost parameter takes care of that automatically.  Mail for
local/virtual/virtual_alias domains defined in postfix are still
delivered normally, transport_maps entries for relay_domains are
still honored.

All other mail -- which should be all the outbound/offsite mail --
is passed to the relayhost.

relayhost doesn't work like that.

Generally, just adding relayhost to main.cf is sufficient.  If you
have complex routing needs you should describe them in detail,
including showing relevant configs.
