"not even a few seconds" is unrealistic even at normal operations
e-mail is not a real-time messenger

why should you?

you most likely would by partial migrations over months

1) a short downtime does not matter
2) you do not lose email due downtime
3) incoming mail are deferred by the sender at downtime
4) hot rsync followed by a cold one due downtime is ultra fast
5) imapsync exists

normally one would migrate the *complete* server at once
and if it is only a new machine at the same location make
the last imapsync in a short downtime-frame while the old
server does no longer accept connections from outside

that all scripted and at last step the old machine becomes
a spare-IP address while the new ones network interface is
started with the IP address of the live machine
