This is a question pertaining to your infrastructure and requirements.
I.e., it has little or nothing to do with postfix or SMTP, as such.

Yes, all of these networking protocols/components are separate, and can
be run separately.

They're *network protocols*.

Reading your question again, I am curious what you think a "postscript
server" does.
