You'd have to consult the relevant *dovecot* documentation for questions relating to *dovecot*

Dovecot does not care what goes here, it just expects a string.

That's obvious nonsense. Dovecot expects input that makes it work.

Then you should have ASKED that.

Somebody thought it worth making the change, why?

Ask the Debuntu maintainer(s).

Should I go with the "new and improved" or revert to my older but "tried and true"?

No clue; since I switched to LMTP I haven't bothered with pipe(8).

Dovecot does LMTP quite well, too :)
