Postfix uses the fallback mechanism SMTP provides. It connects the MX with lowest priority at IPv6 if available and proceed to the next IPv6 or IPv4 address available if it fails. So if you have one MX with AAAA and A record Postfix client would try AAAA first on most OS and if it fails proceed with A records.
