you sure need to add to the relay_domains but i would recommend you to use the relay_recipient_maps only if you do have the full list of users\accounts on exchange and you have a api\interface for the client to add more of the clients into this database... else you will have problem to relay mails.

    surely, postfix needs to know that he is responsible for this
    domains, the
    transport is not enough because it may be used for mail-routing and
    things
    like "error: i told you often enough that this domain does not
    exist" too
