I would recommend using this:

/etc/postfix/main.cf:
    transport_maps = hash:/etc/postfix/transport

/etc/postfix/transport:
    # Inbound relay for example.com. See STANDARD_CONFIGURATION_README.html
    example.com     relay:[mailhost.example.com]
    # All other mail uses the smtp transport which has smtp_fallback_relay
    # added to it in master.cf.
    *               smtp:[some.example.com]

/etc/postfix/master.cf:
    smtp      unix  -       -       n       -       -       smtp
        -o smtp_fallback_relay=[other.example.com]
    relay     unix  -       -       n       -       -       smtp

Using different transports for inbound (relay) and outbound (smtp)
reduces congestion problems with the per-destination scheduler.
