some clients prefer PLAIN, some clients prefer LOGIN.  They're
both plain-text equivalent (encoded, not encrypted).

cram-md5 sends the password encrypted, the message is still sent
in the clear unless you use TLS.  Google for all the hairy details.

But really, you should use TLS. It's not that hard.
