Postfix is only the MTA in this game and does send and accept mail. If you want to secure this transport channel have a look at http://www.postfix.org/TLS_README.htmland http://www.postfix.org/SASL_README.html if you do submission. If you want to secure the transport channel used for fetching you have to use the documentation of your POP3/IMAP server. If you want to secure the content of your mail regardless of the transport channel used have a look here http://www.postfix.org/addon.html#security-gateway.
