Postfix does not choose its DNS servers - that choice is made by
the resolver(3) library routines based /etc/resolv.conf and perhaps
other information.
One option is to chroot the SMTP client and server, and supply
a custom /var/spool/postfix/etc/resolv.conf file (and ignore
Postfix start-up warnings :-).
Your system resolver routines may have other options to bind to a
different DNS server, but those are system options not Postfix
options.
