The Barracuda A/S appliances do this via a web UI.  It lists every incoming
mail, ever--from, to, date/time, and when you click it, the entire individual
email is displayed with all headers.

It sounds like this is what you're looking for.  I don't know of a purely open
source equivalent of this one UI feature exists, but I've never gone looking for
such.  Sounds like you're a good candidate for a mail appliance.
