short answer: google for altermime.
long answer: it's not as simple as "append some text". it's the same
problem as with html, you can't simply add <ul> <li> joe </li> </ul> at
the end and hope browsers will skip the </html> tag and guess where to
put your joe... while that's easy for text only mail, not all mail is
text only.
also, altering mail in transit may break signatures.
