lately I've been getting TONS of emails with all Chinese ( Asian..)
characters, coming from email addresses like mkdjf.g...@live.cn
  part of the headers:
Received: from [220.176.140.184] (helo=live.cn)
by cl104.justhost.com with esmtp (Exim 4.69)
        (envelope-from<mkdjf.g...@live.cn>)
        id 1PQ4aJ-0006DH-N1

what is the best way to deal with these?

the header above was generated by Exim, and as I guess you use postfix, it means it is not generated by your server.

you need to show the Received header that was generated by your (outest) postfix.
