Assuming that you don't have a IPv6 only Postfix server and there are until now no IPv6 MX only sites, you could simply use both in parallel. The IPv6 enabled will try to deliver by IPv6 first, the other one only with IPv4 but that should not matter at all. If you want to route *all* mail which can be delivered by IPv6 you should deliver all mail with the IPv6 enabled Postfix. As far as i know there is no routing after MX resolution which could be used to decide at this stage which relay to use, but i'm not sure if that is what you want either...
