If we specify mydestination to be $mydomain all mail is considered

Only for those users we would like all mail to be sent outside.
How do I handle this?
Please elaborate more. Where do you want the roaming user's mail to go,
and where are they supposed to be able to send from?

The mail to roaming users need to go out to the web server for them to
get 24x7 access (as access to our remote factory is haphazard and
limited to day time only), those for office staff can remain local. The
roaming users can user the web server to relay their mail.
