I don't know why that is, but I suspect it is due to the fact that this is a dynamically named transport variable. Maybe what postconf is doing is iterating through its known list of variables and displaying them in that order, and ${whateveryourtransportis}_destination_recipient_limit (and a few others) are not really "known" in that context. I remember that confused me in the past because I was literally looking for "dovecot_*" stuff in the documentation and not finding it.
