Sorry I forgot one important part in my post:

local_header_rewrite_clients = permit_mynetworks
smtp1:~# postconf mynetworks
mynetworks = 127.0.0.1             157.193.0.0/16             172.16.0.0/16


In my case rewriting from mynetworks works for for the envelopts but **not** for the headers.
