Google returned the following page which explains the difference between
header and envelope pretty good:

In short, the envelope is for the actual sender and recipient addresses
used by MTAs. The message you're reading right now had an envelope
recipient equal to your email address (and possibly others Gmail
addresses, as you're not the only Gmail user subscribed to the list)
while still having the header recipient address equal to
postfix-us...@postfix.org.
