This, along with doing the same to the relayhost value seems to have done the trick. I still have a few other issues to clear up, but at least it is now attempting to failover to the other SMTP server.
Thanks loads to everyone that chipped in with help. That it ended up being something so simple is a trifle embarrassing. I spent something like two or three days trying to solve this before coming to you guys!
