1-Read the RELEASE_NOTES file for incompatible changes that may affect
your configuration.

2-Stop Postfix. LEAVE THE OLD CONFIGURATION FILES IN PLACE.

3-Install Postfix. DO NOT COPY THE OLD CONFIGURATION FILES
  OVER THE NEW FILES.

4-Start Postfix and watch the logfile.

That's how I upgrade Postfix (often without even stopping it,
when upgrading between similar versions).

(If you made the mistake of copying the old config files over the
new files, you need to execute "postfix upgrade-configuration" to
make Postfix work again).
