Ahh this is more than possible .. Would 'postfix reload' not complain
about a syntax error? I'm sure I've seen this in the past. I always
reload postfix after editing main.cf :-)

No, postfix does not check for valid parameter names. Postfix allows you to "make up" parameter names to use in variables, so it's not unexpected for a variable name to be unrecognized. That's why you should always check "postconf" output for the expected values.
