Postfix logging is not configurable.
You can't use header_checks like you can for Subject?
main.cf:
header_checks = pcre:$config_directory/header_checks.pcre
header_checks.pcre:
#/^Subject:/ WARN Subject
(this is commented out, but it did work at the time I needed it)
