Why? What is the evidence that the recipient address is not listed in
any canonical_maps, recipient_canonical_maps or virtual_alias_maps?

Did you ever post:
- "postconf -nf" output?
- "postconf -Mf" output?
- relevant logs?
Yes, if the recipient address is subject to rewrites, or setting
"smtpd_reject_unlisted_recipient = no", or the message did not
even arrive via SMTP.
