Can you try a little hardwer and examine the whole logfile again?
There may be logging several minutes minutes to hours later.

Email does not silently disappear from the Postfix queue.

- There will be a "removed" logfile record when the message is
  removed from the queue:

    postfix/qmgr[PID]: QUEUEID: removed
    postfix/postsuper[PID]: QUEUEID: removed

- There may be logging when a Postfx delivery agent tries to open a
  non-existent queue file.

    postfix/smtp[PID]: open active QUEUEID: No such file or directory
    postfix/discard[PID]: open active QUEUEID: No such file or directory

If you have other software that silently manipulates messages in the
Postfix queue, then that happens outside the Postfix warranty.
