Dovecot submission is just a proxy, it still has to pass the submitted message to postfix so there is little reason to use dovecot submission unless you need BURL support. Note that if you don't know what BURL is then you don't need it and aren't using it.
After I read that I tried uncommenting the submission line in master.cf <http://master.cf> but then Postfix wouldn't start so I commented it out again and restarted Postfix
Indeed if dovecot is listening on port 587 then postfix cannot also bind to that port. If you want postfix to listen on 587 then you need to disable the submission service in dovecot.
The last of these problems doesn't show in the log just Thunderbird says it couldn't connect to the relay server and I should check to make sure my email address is correct
As long as you're using dovecot for submission this is not a postfix issue, it is either an issue with dovecot or thunderbird.
On another note, since it appears you're configuring a new server you should consider using port 465 (submissions) instead of 587 (submission).
