I don't know anything about Microsoft Office 365 and email.
What does the error depend on?

Settings in Microsoft Office 365's "Exchange Online" area that control which domains and addresses can receive mail. I can't say precisely what the settings are, as I haven't had to touch that in quite a while, but whoever administers the tenant account can fix it.

As you are apparently not in control of the MS365 tenant account, you cannot fix it.

Is the server (sender-domain.mail.protection.outlook.com) running directly at Microsoft and is it managed by MS, or is it running at an IT system house that then manages the server for the recipient?

*.mail.protection.outlook.com machines are the exterior gateways for MS365, operated by Microsoft.
