I've found the root cause. Sorry, it's pretty trivial.
While trying to generate a long-long answer with all the details to
share with you guys, I've realized I have smtpd_milter_maps defined in
my configuration.
It's been a while, but I guess my goal was to disable Milters for local
clients to skip checks, aka "whitelist" everything local, but I
completely missed that DKIM signing will be disabled too because of that
change.
Also, it looks like I modified the smtpd_milter_maps file, though I
didn't restart/reload Postfix after the modification, so when I did
upgrade, new configuration finally kicked in.
