It works with sender_dependent_relayhost_maps but It's a little bit complex
architecture (3 postfix and 3 directories structure)

you mean depend on the sender, and not the recipient. "From:" and "To:"
usually refer to headers, which should never be used for routing.

no. if you want per sender relay host, then use
sender_dependent_relayhost_maps as suggested by Neil. and no, I don't
understand what you meant by multiple instances... did you read the doc?
