*You* haven't changed anything, but something has. Zero-maintenance
systems don't exist. Done any package updates recently?

Anyway, its your dovecot that's doing most of the complaining, so this
is a MySQL problem. It is telling you quite clearly "too many
connections", it doesn't matter what you think. Perhaps there *is* 800
open connections, that's absolutely the first thing you should be
checking. Use netstat, use the mysql command-line client, check the
mysql logs, etc.
