As far as holding Keystone jacks, I found a device that you push one into and it holds it while you punch the wires down, I use a punch down tool and the only thing I had was every once in a while I somehow messed up and punched down a finger, after a few bloody ones, I found that tool that has been the end of that issue. The device is flat, made out of hard rubber and designed to hold a jack in place also has guides for the cable so you can keep control of the cable going to the jack. You pre-dress your wires lay them in place and start punching down.
If you do not have a LOT of dmark points a couple of 6 keystone position wall plates will make a nice small jack field. The house I rented had an awful wired installation, I just ran cat6 to the rooms of interest, bought me two 6 port wall plates and put them in the wall in the area in the garage where the router goes, done deal. I think the two plates cost me $2 each. Use low voltage wall boxes and you are done. Total cost less that $6.
