Just on this specific point, consider the support options from Canonical; when I've had cause to speak with them about possibly using their services they've seemed pretty good, although I've not had to actually use them so can't really comment properly. There's nothing to stop you going with free then adding support if/when you need it, or for that matter starting with support to get everything set up then dropping it later if you don't need it any more.
Personally I would go with the distro I am most familiar with (in which case it would these days be Ubuntu), as this will reduce the time you spend "playing", although I suspect you have a much wider base of knowledge across distros than I do!
