This is not a direct answer to your question but more a tip you could test. On
my island there is a fish restaurant where they hang bags filled with water
against flies. Not sure if it works but I never see flies! And they also cut
and prepare the fish at an open counter.
I understand it's a historic house but if you can cook in it, you could test
this in the kitchen...for what it's worth...

Hi folks,
Does anyone have recommendations for particular brands of paper or tape for
catching flies?
We’re having an issue in one of our historic buildings where we demonstrate
cooking – food attracts flies, and the flies are attracting wasps. We’re taking
measures to deal with the wasps but also want to try to cut down on the flies,
and we already clean as much as possible in that space.
Is one brand of fly tape as good as the next, or are some better than others?
